Josh Niland: Scale-To-Tail

Josh Niland brings his ‘scale-to-tail’ seafood philosophy to the Vitocco Family Kitchen. The internationally acclaimed chef (Saint Peter and Fish Butchery) will demonstrate how to utilise every part of a whole fish with precision and creativity. In this live session, audiences will learn techniques spanning head and jowls to the scales, highlighting sustainability, innovation, and zero-waste principles in seafood cookery.

This program will be followed by an exclusive book signing, where guests can purchase Saint Peter: Chapter & Verse and have it signed by Josh Niland.
