Helly Raichura takes to the Vitocco Family Kitchen for a live demonstration moderated by Joanna Savill, sharing her contemporary approach to regional Indian cuisine. The Gujarat-born Australian chef, author and founder of Enter Via Laundry will present a signature dish that reflects her thoughtful interpretations of traditional recipes, shaped by native Australian ingredients and local context. Her work bridges heritage and innovation, offering audiences a nuanced perspective on Indian cooking today, accompanied by a tasting experience.
