Palisa Anderson presents a live cooking demonstration in the Vitocco Family Kitchen offering insight into her distinctive soil-to-plate philosophy in a conversation facilitated by Joanna Savill. A chef, regenerative farmer, and co-founder of Chat Thai and Boon Luck Farm, Anderson will showcase a signature Thai dish that reflects her commitment to sustainable agriculture and deep respect for ingredients. Drawing on her work across farming, cooking and hospitality, this demonstration highlights the connections between land, culture and contemporary Thai-Australian cuisine, with a tasting prepared for audiences to experience the dish firsthand.
